Welcome to the launch of the Last Resort Chocolate. We invite you to taste the fruits of the adventure. Embark with us and taste this Dream to Bar Adventure of ours cultivating a true to terroir chocolate in the Wailua Homesteads on the east side of Kauai, Hawaii. Here we grow and produce products as unique as the Hawaiian archipelago itself.
The adventure began in 2019 as a dream to immerse into a purposeful collaboration with the ‘Aina, the Land, to create a respectful existence among the Hawaiian culture and grow and produce a healthy, great tasting, true to terroir, chocolate.
Made with 100% Kauai-grown cacao, it's a pure expression of our island home, never blended with beans from other regions. Every step, from growing the Cacao and fermenting the Seed to crafting the finished bar, takes place on our farm, in our small chocolate laboratory outfitted with Italian and American made equipment making our chocolate 100% produced on Kauai. We choose this colorful exhaustion over another well rested, dull book in the library of life to make available a great chocolate. In this world, where the origin, quality of ingredients and processing practices are often questionable, we're committed to raising the bar. After all, its not candy, its food.
The Last Resort Chocolate exists on the island of Kauai in the Hawaiian archipelago. The Hawaiian-Emperor seamount chain stretches some 3,900 miles and contains 137 islands, the tallest mountain on the planet and more than 80 volcanoes to include the youngest Hawaiian volcano known as Kamaʻehuakanaloa Seamount. The Hawaiian culture is as deeply rooted in agriculture as it is adventure. Canoe plants such as Kalo or Taro, Mai’a or Banana, Niu or Coconut and ‘Uala or Sweet Potato were moved from island to island in ocean going canoes, to sustain the adventurers. Systems such as aquaculture, irrigation and terracing were mastered making best use of the extreme island terrain. What a perfect place to cultivate specialized crops. Last Resort Chocolate works in several specialty crops, the bulk of which are Cacao, Vanilla and Macadamia Nuts.
